The key is freshness. Ramón Peña is situated on the shores of a deep Ria, or fjord, where the Atlantic ocean reaches into Galicia. This means they receive the mejillones hours after they are harvested. The skilled local workers clean and cook the mussels, then pack them one by one into each tin.
In Galicia, mussels are farmed in the cool tidal waters just a few miles from Ramón Peña. Only plump, flawless mussels are selected.
