This flavorful cut of ham is from a famed, ancient breed of pig, the cerdo Ibérico. Compared in class to Beluga caviar or Kobe beef, Jamón Ibérico de Bellota is one of Spain’s most treasured culinary contributions. The diet of the prized pig is what gives this jamón its sought after flavor. Roaming the lush meadows of Western Spain, small groups of Ibérico pigs feast on the distinctive sweet “bellota” acorns of the region.
Each of the exquisite hams hangs for over two years in clean mountain air to cure. They lose over 40% of their weight as the much of the fat melts away and a complex flavor and texture develops. Much less salt is used in curing the hams allowing the exceptional flavor to shine. The resulting ham is deep red and marbled with golden fat that literally melts at room temperature.
