This a sublime Gran Reserva sherry vinegar, aged in oak barrels for at least 10 years. This bone-dry vinegar has a deep amber color with flavors of roasted nuts and spices. Like a fine wine, this vinegar deserves to be savored. Drizzle over fresh garden tomatoes and cucumbers, or add to gazpacho for a deep, complex flavor.
Chef José Andrés works with artisan producer Marchenilla in Jeréz de La Frontera for his personal collection. Their sherry vinegar is aged using the ancient Solera process, storing the vinegar in giant oak barrels. Vintages are mixed every year, with some going back decades. The result is an exceptional vinegar with a deep complexity.
