Hojiblanca olives are a flavorful olive, famous in the region of Cordoba. These green, meaty olives are aged in brine, then crushed to make them more tender. We like to add garlic and tarragon to the jar and let it marinate in the refrigerator for a few days to add even more flavor. Serve with a glass of white wine or sherry and aged Spanish cheese.
