We can't wait for you to taste this bacon, it is so meltingly rich and full of flavor. Cook slowly over low heat and your kitchen will fill with the enticing smoky flavor of this premium bacon. Unlike regular bacon, these thick slices have less lean and more fat - which is a good thing, because the fat contains all of the flavor.

The secret is Iberico breed pork, pasture raised outdoors at a ranch in Texas. A wild diet of acorns, mesquite beans and grasses bring a complexity of flavor. The pork bellies are smoked with oakwood for a perfect finish.

Iberico bacon is special. It is intensely flavorful, and the fat begins to melt at room temperature. Cook slowly at medium heat until crisp but not crunchy. 

Texas Iberico® pigs are raised outdoors year-round on the Trails End Ranch, owned by Ashly Martin, a third-generation rancher in Comfort, Texas. The 1,500-acre ranch, with its live oaks, mesquite trees and prickly pear cactus, provides the perfect environment for these exceptional pigs. Roaming freely, they forage on a natural diet of acorns, herbs, mesquite beans and prickly pear fruit, which imparts a rich, complex flavor to the pork—ideal for premium cured ham.

Never given antibiotics and allowed to live outdoors their entire lives, Texas Iberico® pigs thrive in a landscape similar to Spain's 'dehesa' forests. 

A few years ago, a herd of purebred Iberico pigs was flown from Spain to establish the Texas Iberico® line. Their antioxidant-rich diet of acorns, mesquite beans and prickly pear fruit adds a distinctive, uniquely Texan flavor to the meat.

Once opened, wrap in butcher paper or plastic and refrigerate. May be frozen for longer storage.
